Tasting Notes

A soft and elegant wine with enticing aromas of ripe dark plums and blackberries. The palate reveals generous layers of juicy berry fruit, beautifully framed by a dry, refined finish. Well-integrated acidity and supple tannins provide structure and promise graceful maturation over the next 3–5 years. Enjoy on its own or alongside grilled meats or vegetables. Exceptional slightly chilled in summer, paired with smoked trout, salmon, or a spicy vegan salad.

Method of Production

Grapes were harvested in the early morning to ensure cool, healthy fruit reached the cellar in optimal condition. Picking commenced at peak ripeness to capture balanced flavour and natural freshness. The grapes were destemmed and fermented on the skins with regular pumpovers to promote gentle tannin extraction and enhance fruit expression. After pressing, the wine was transferred to a combination of stainless steel tanks and seasoned (second and third-fill) barrels, where malolactic fermentation was completed. Maturation continued for an average of 18 months before final blending and bottling.
